Ingredients (serving size: 1 person)
1 tbsp of vegetable oil
3 cloves of garlic
1 thumb-sized piece of ginger
1 cup of Broccoli (fresh or frozen)
12 baby carrots
1/2 tsp of soy sauce
1/2 package of tempeh
Honey Aleppo Sauce (TJ's) (use as much as desired)
Small handful of peanuts
1 tsp of sesame seeds
Directions
Chop the tempeh into bite-sized pieces and place in a bowl with Honey Aleppo sauce to marinade for 30 minutes.
2. Add oil to a frying pan on medium heat. Mince garlic and ginger and add to the pan when sizzling.
3. Add the marinated tempeh to an air fryer at 380 degrees for 8-10 minutes.
4. Once the garlic is fragrant, add the veggies and soy sauce to the pan. You will let these cook until they are soft and browned (about 10 minutes), adjusting the temperature as needed (turn to high if you want your veggies charred).
5. Prepare garnishes. Toast sesame seeds in a small pan until brown, then crush a small handful of peanuts.
6. Once the tempeh cooked and colored (check it at the 8 minute mark), add it to the pan along with some extra Honey Aleppo sauce. Mix together and let everything soak in the sauce on low for a couple of minutes.
7. Add garnishes and serve
Recommended side dish: Red quinoa, or some other kind of high protein grain
